This is a dry cure, in which you bury the meat. It works exceptionally well with fish – cure for about 24 hours for large fish – but is also great for most red meats.

Ingredients

Quantity Ingredient
700g salt
300g caster sugar

Method

  1. Mix the sugar and salt together in a large bowl. Add herbs, citrus zest or any other aromatics as you wish.
