This cocktail is best served in a Julep cup glass

Ingredients

Quantity Ingredient
8-10 mint leaves
1 barspoon sugar
60ml rémy martin vsop cognac
dash peach bitters
15ml peach and ginger shrub
mint sprig, to garnish

Method

  1. To make the peach and ginger shrub, add 500 g sectioned, ripe peaches and 100 g peeled and chopped fresh ginger to a jar and muddle. Pour in 750 ml apple cider vinegar and let sit for 24 hours. Strain off the solids and heat the liquid in a saucepan on the stovetop, but do not boil. Add 1 kg sugar and stir to dissolve. Allow to cool. This will keep for 2 weeks in the refrigerator.
  2. To make the cocktail, add the mint leaves to a julep cup and place the sugar on top. Press with the back of the barspoon (careful not to tear or crush the mint) to release the oils into the sugar. Add the cognac, bitters and shrub. Stir with crushed ice until frosted. Top with more crushed ice and garnish with a mint sprig.
