This cocktail is best served in a highball glass.

Ingredients

Quantity Ingredient
30ml peach shrub, (see method)
45ml pisco
6-8 mint leaves
dash peach bitters
mint sprig, to garnish

Method

  1. To make the peach shrub, in a saucepan over low heat, gently warm 250 g peach purée, 440 g sugar and 250 ml apple cider vinegar until the sugar dissolves. Remove from the heat and leave to cool.
  2. Build the cocktail in a highball glass with crushed ice and swizzle. Garnish with a mint sprig.
