This cocktail is best served in a highball glass.

Ingredients

Quantity Ingredient
4 vietnamese mint leaves, plus extra to garnish
60ml havana club blanco rum
30ml choya plum wine
20ml chilli and passionfruit syrup, (seemethod)
20ml fresh lime juice
soda water

Method

  1. To make the chilli and passionfruit syrup, bring 1 litre water to the boil, add 1.25 kg sugar and stir until dissolved. Add 12–15 bird’s eye chillies and 500 ml tinned passionfruit pulp. Reduce until you have a syrup-like consistency. Fine-strain. Cool before using.
  2. To make the cocktail, bruise the mint leaves and drop them into the bottom of a highball glass. Add ice and build the cocktail like a mojito. Top with crushed ice and then top up with soda water. Garnish with the extra Vietnamese mint.
