This cocktail is best served in a coupette glass.

Ingredients

Quantity Ingredient
60ml hennessy vs cognac
45ml fresh lemon juice
4 dashes jerry thomas bitters or angostura bitters, plus extra to serve
10ml Sugar syrup
4 shiso or basil leaves
1 egg white
1 shiso leaf, to garnish

Method

  1. Add all the ingredients to a mixing glass and process with a stick blender. If you don’t have a stick blender you can shake in your chosen shaker.
  2. After the liquid is combined and the egg white fluffy, pour into your shaker, add ice and shake vigorously for 15–20 seconds.
  3. Double-strain into a coupette glass, making sure you catch all the flecks of shiso leaf in your strainer.
  4. Garnish with a shiso leaf on the edge of the glass and a few drops of bitters for aroma.
