The yummiest way for kids to enjoy salmon – barbecued on sticks with a squeeze of lemon. For the grown-ups, lemony salmon is dressed up with spicy salt. If you prefer to eat with your kids, you can prepare both versions of the skewers then cook them at the same time.

Ingredients

Quantity Ingredient
700g salmon fillets, skinned and cut into 3 cm cubes
olive oil, for brushing
squeeze lemon juice
salt
8 bamboo skewers, soaked for 30 minutes

Ingredients for adults

Quantity Ingredient
2 teaspoons oregano, chopped
2 teaspoons rosemary, chopped
1 teaspoon sesame seeds
1/2 teaspoon ground cumin
1/4 teaspoon chilli flakes
1/2 teaspoon salt
1 tablespoon olive oil
1 lemon, very thinly sliced into rounds
crisp green salad, to serve

Method

  1. Preheat a barbecue grill to medium or a frying pan over a medium heat.
  2. Divide the salmon into two bowls.

Dish one

  • Thread the salmon from one bowl onto four skewers. Lightly brush the salmon skewers with olive oil and sprinkle over a little lemon juice and salt.

    Cook, turning occasionally, for 6–8 minutes, or until the fish is cooked through, and serve.

Dish two

  • Combine the oregano, rosemary, sesame seeds, cumin, chilli flakes and salt in a small bowl.

    Combine the olive oil and the salmon in a bowl. Add the spice mix and toss until the salmon is well coated. Thread a piece of fish then a slice of lemon, folded in half, onto a skewer and repeat until all the salmon and lemon is used up. (You should end up with four skewers.)

    Cook the skewers, turning occasionally, for 6–8 minutes, or until the salmon is cooked through.

    Serve the spicy lemony kebabs with a crisp green salad.
