Grilled sausage kebabs with purple slaw, wasabi mayo and green chilli

Thread cut snags onto sticks for the kids and for the adults, ditch the sticks and serve the sausages with a crunchy zingy wasabi slaw. You can prepare the kids’ skewers first and fry them at the same time as the adults’ snags.

Ingredients

Quantity Ingredient
8 pork or beef sausages
125g mayonnaise
125g greek-style yoghurt
squeeze lemon juice
1 purple cabbage, shredded
4 bamboo skewers, soaked for 30 minutes

Ingredients for adults

Quantity Ingredient
2 teaspoons greek-style yoghurt
wasabi paste, to taste
2 spring onions, finely shredded
small handful flat-leaf parsley, chopped
1 green chilli, finely chopped
250g mixed cherry tomatoes, halved
1/4 red onion, finely chopped
olive oil, for drizzling
salt

Method

  1. To make the slaw, combine the mayo, yoghurt and lemon juice in a large bowl. Toss the cabbage through the mayo mixture until well coated. Transfer half the slaw into another bowl.

Dish one

  • Preheat a frying pan over a medium heat.

    Slice 4 sausages into 2 cm thick discs and thread them onto the skewers. Cook the skewers, turning frequently, for 8–10 minutes, or until the sausages are browned and cooked through.

    Serve to the kids with the plain purple slaw.

Dish two

  • Preheat a frying pan over a medium heat.

    Meanwhile, combine the yoghurt and wasabi in a small bowl. Add the yoghurt mixture, spring onions and half the parsley to the remaining cabbage and toss. Top with the green chilli.

    Mix the cherry tomatoes, red onion and remaining parsley in a bowl. Drizzle with olive oil and add salt to taste.

    Fry the remaining sausages, turning often, for 8–10 minutes, or until they are cooked through. Serve with the spicy wasabi slaw and cherry tomato salad.
