Brussels sprouts with pine nuts and bacon

Ingredients

Quantity Ingredient
400g brussels sprouts, tops cut off, halved
1 tablespoon olive oil
1 red onion, chopped
2 garlic cloves
80g pine nuts
2 sprigs thyme, chopped
120g bacon, chopped
1 tablespoon lemon juice
2 tablespoons dry white wine
sea salt
freshly ground pepper

Method

  1. Bring a small saucepan filled with salted water to the boil over medium heat. Add the sprouts and cook for about 5 minutes. Drain immediately so they do not continue to cook.
  2. Heat the olive oil in a non-stick frying pan and cook the onion, garlic, pine nuts, thyme and bacon, stirring continuously.
  3. When the bacon has changed colour, add the lemon juice and white wine. Let it sizzle and add the sprouts. Cook until they are heated through. Transfer to a warmed dish and serve.
