Spanish mushrooms with thyme

I love Spanish food, and this dish is one of my favourites. If you can, use one of those Spanish terracotta serving dishes. Serve it really hot, straight from the oven, so the mushrooms are bubbling as you bring them to the table.

Ingredients

Quantity Ingredient
1 tablespoon extra-virgin olive oil
1 teaspoon butter
1 garlic clove, finely chopped
500g button mushrooms or similar
splash white wine
few sprigs thyme
1/2 lemon, juiced
1 tablespoon yoghurt
salt and freshly ground pepper

Method

  1. Preheat the oven to 200ºC.
  2. Combine all the ingredients in a terracotta or similar ovenproof dish and cook for 15–20 minutes, or until you can see the mushrooms bubbling. Serve immediately.
