Crunchy beans with anchovy and goat’s cheese dressing

This side dish goes with everything. Don’t be freaked out by the anchovies; they dissolve in the dressing, leaving only a gorgeous salty flavour.

Ingredients

Quantity Ingredient
400g long green beans
4 anchovy fillets, rinsed and finely chopped
1 shallot, finely chopped
1 tablespoon extra-virgin olive oil
2 teaspoons lemon juice
sea salt and freshly ground pepper
60g marinated goat’s cheese, crumbled
1/4 cup pine nuts, lightly toasted

Method

  1. Bring a large saucepan of salted water to the boil. Add the beans and blanch for 1 minute. Drain the beans well then tip them into a bowl of cold water, which preserves the colour and stops them cooking any further.
  2. Combine the anchovies, shallot, olive oil and lemon juice in a mixing bowl. Season to taste with salt and pepper. Arrange the beans on a serving platter and drizzle on the dressing. Toss gently then top with the crumbled goat’s cheese and toasted pine nuts and serve.
