You know how rice has the ability to soak up delicious juices? Well, rice is not happening in this cookbook. But please try this dish whenever you really think you’re missing out – it goes beautifully with my beef vindaloo, or any Thai dish in this book, or even the moroccan chicken tagine.

I know it sounds weird, but I promise you it works.

Ingredients

1/2 cauliflower

Method

  1. Pull the cauliflower apart into small florets and place in a microwave-safe container with a lid. Do not add water. Microwave on full power for 5 minutes.
  2. Using a hand-held blender, whiz the cauliflower until it starts to resemble rice. Alternatively, pulse it in bursts in a food processor. This is all it needs. Serve immediately.
