You can also cook this dish on a barbecue or griddle plate. It is an easy accompaniment to meat, chicken or fish.

Ingredients

Quantity Ingredient
10 spears asparagus, woody ends trimmed
glug of extra-virgin olive oil
squeeze lemon juice
salt and freshly ground pepper

Method

  1. Place the asparagus spears in a flat bowl. Add the olive oil, lemon juice, salt and pepper and turn them around so evenly coated. Leave for 10 minutes – which is about the time it takes to cook and rest a piece of chicken or steak.
  2. Heat a frying pan or griddle plate over a high heat. Add the asparagus with its marinade and cook for 3 minutes, tossing and turning with tongs, until just tender. Serve straight away.
