Clearly this will be a seasonal dessert and you’ll know just the right time to choose those gorgeous soft ripe peaches … white, yellow, whichever you like. Of course, nectarines will work just as well. The natural sugars are released once the peaches hit the pan or grill and caramelise.

Ingredients

Quantity Ingredient
4 peaches
1 tablespoon balsamic vinegar
4 teaspoons greek yoghurt

Method

  1. Heat a griddle or barbecue.
  2. Cut the peaches in half and remove the stones. There is no need to peel them. Place the peaches flesh-side down and cook for approximately 3 minutes or until the fruit has a nice brown colour.
  3. To serve, drizzle with balsamic vinegar and a dollop of yoghurt.
