I first saw this idea in a Jamie Oliver cookbook, and it made me realise how well herbs and fruit go together. This is another refreshing dessert that relies on the natural sweetness of the pineapple, so make sure it’s ripe. And look, I even add a teaspoon of sugar!

Ingredients

Quantity Ingredient
1/2 ripe pineapple, peeled
1 cup mint leaves
1 teaspoon sugar

Method

  1. Cut the pineapple into very fine slices and arrange them on a platter, carpaccio style.
  2. Roughly smash the mint leaves using a mortar and pestle, then mix in the sugar. Sprinkle the minty mixture over the pineapple and serve.
