I was brought up on a farm and some of the recipes here are our old family favourites. But there are also new dishes from my restaurant, such as the beef dish that food critic Jay Rayner said was the best he had eaten in 2013. I’ve stripped it back to make it easier to make at home, but it will be a hit at any dinner party.
