Granny’s bacon sarnie

I know it’s just a bacon sandwich… but this is the best I’ve ever had. Gran used to cook them on one of those old white enamel gas cooker grills with the red knobs. Choose the best bacon and use thick-sliced white bread. Gran bought hers from M&S. She sadly passed away 12 years ago. If I was 10% of what she was, I would be a 100% better person. Granny Smith was a legend, as were her bacon sarnies; she would be proud they are now in print.

Ingredients

Quantity Ingredient
4 rashers dry-cured back bacon
50g salted butter, softened
1 tomato, quartered
2 thick slices white bread

Method

  1. Put the bacon into a cold frying pan, then increase the heat and cook for a couple of minutes before adding a knob of the butter and the tomato.
  2. Cook, turning once, until the bacon is just golden brown at the edges and cooked through and the tomatoes are softened (five or six minutes).
  3. Slather the bread with the remaining butter and place the tomatoes on to one slice. Press them down slightly, then layer on the bacon and top with the second slice of bread.
  4. Press down lightly to squish it all together, then cut in half and eat, mopping up any spilled butter and juices with the sandwich as you go.
