Merguez is a type of spicy north African sausage, made mainly from lamb or mutton, but it sometimes includes beef. It’s very popular in France, and it’s sold all over the place there. It’s heavily spiced with cumin, chilli or harissa, and sometimes has sumac, fennel and garlic added. It’s often served with couscous like this, but trust me, you could serve it with chips and you’ll love it all the same!
