Pan-fried chorizo & merguez couscous

Method

1. Put the couscous into a large bowl, cover with the hot stock, then cover the bowl with clingfilm and leave to stand for 2–3 minutes.
2. Meanwhile, deseed and slice the red peppers and dice the onion. Slice the chorizo and merguez sausages.
3. Heat the oil in a large frying pan over a medium-high heat, add the peppers, onion and sausages and cook for 4–5 minutes, stirring, until sizzling and slightly softened.
4. Chop the parsley. Uncover the couscous, pour all the contents from the pan into it and stir in thoroughly. Add the parsley, season with salt and pepper, and serve.
