I love keeping a stash of these bars in the freezer as a healthy snack when I feel like a little sweet treat. Sometimes I roll the coconut orange mixture into balls, but pressing it into a tin is even faster.

Ingredients

Quantity Ingredient
115g almonds
60g shredded coconut, plus an extra handful to garnish
40g linseeds
270g medjool dates, pitted
1/2 orange, juiced
1 orange, finely grated zest
1 teaspoon vanilla extract, (optional)
1 big pinch flaked sea salt

Method

  1. Pulse the almonds, coconut and linseeds in a food processor until finely ground.
  2. Add the dates one at a time, and keep pulsing with each addition. Continue until all the dates are ground and you have a coarse, sticky mixture. Add the orange juice, zest and vanilla (if using) and briefly pulse.
  3. Line a rectangular cake tin with plastic wrap or baking paper and pour the mixture into the tin. Use your hands to spread the mixture evenly, compressing firmly as you go.
  4. Add a sprinkling of extra coconut on top and press it down into the mix. Last, sprinkle the sea salt over the top.
  5. Set in the freezer for at least an hour, then remove and cut into bars.
  6. These little treats will keep in the freezer for a week and make excellent afternoon snacks or lunchbox treats.
