Lemony broccoli quinoa salad

This is the first recipe I published on my blog. It was around the time quinoa was just beginning to make a name for itself, but no one quite knew what to do with it yet. Years later, I am still making this salad, and unlike most of my dishes, I don’t alter a single thing. It is perfect the way it is.

Ingredients

65g quinoa
60g broccoli florets, cut into bite-sized pieces
2 tablespoons pepitas
small handful chives, roughly chopped
50g feta, cubed
1/2 small avocado, cubed

Dressing

1 lemon, zested and juiced
2 tablespoons olive oil

Method

  1. Start by cooking the quinoa. Rinse under cold running water, add to a saucepan with 120 ml cold water and put over high heat. Bring to the boil, then turn the heat to low and cover with a lid. Cook for 10–12 minutes, until al dente. Once cooked, rinse in a fine mesh strainer under cold running water and drain well.
  2. While the quinoa is cooking, blanch the broccoli florets in salted boiling water for 1 minute. Drain under cold running water until cool, then pat dry with a clean tea (dish) towel.
  3. Dry toast the pepitas in a frying pan over high heat. Toss regularly and remove from the heat as soon as they start to colour.
  4. Make the dressing by combining the ingredients and a big pinch of salt and freshly ground pepper in a screw-top jar. Shake vigorously to combine, then set aside.
  5. When the quinoa is drained, transfer it to a large serving bowl with the broccoli and chives. Pour over half the dressing and toss to combine. I use my hands for this. Add the feta and avocado, and very gently toss again. Taste, and adjust the seasoning if necessary. Sprinkle on the pepitas and drizzle over a little more dressing if you wish.
  6. Any leftover dressing can be stored in the fridge for up to 4 days; the salad will keep in the fridge for a couple of days if you leave out the avocado and herbs and add them just before serving.
