Lunch is my favourite meal of the day. I generally only make it for myself, so lunch is my time to get creative and experiment with flavours, ingredients and ideas. I love looking in the fridge and pantry and coming up with new dishes from the food I have on hand – it is also a great way to avoid food waste or another trip to the shops.
After all these years working in kitchens, I know what pairs with what – and I love nothing more than extending this knowledge by substituting similar ingredients, and developing new, exciting recipes from familiar combinations. I suggest you try the same: use the recipes in this book as your guide, but don’t be shy – give them your own twist. Cooking is about trying, daring, and ultimately, about having fun.
