While most of the time I really enjoy cooking and find it a way to relax and be creative, it can be an extremely stressful situation. For me, there are a few factors which can cause that to happen: people I don’t know watching me while I cook, time pressure or cooking dinner for more than six people. It’s not often that these things happen but when they do I will go into meltdown mode and will inevitably burn the food or my hands, mix up tablespoons with teaspoons and just generally become a messy-bunned, hot mess. Thankfully, when I cook a main meal, I’m usually only feeding myself or four people so I can avoid the stress-bomb problem. There have been some times when mass cooking has gone well and that is usually when I’ve got a recipe that needs minimal hands-on time (like slowcooked meat or big pots of soup). For these reasons, the recipes in this chapter are small-scale the majority of the time, but there are a few that can easily serve a flock of hungry people or be doubled or tripled to accommodate more mouths without a load of extra work. Hopefully I’ll remember to take my own advice and make these kinds of dishes for mass-catering, rather than attempt to serve things like pizza (in what world would that be a good idea? I just don’t know).
