The town of Zadar is famous for its maraska cherries and its Maraska Liqueur Company. You will probably have heard of maraschino liqueur, which is used all over the world and made in many countries. However, the original cherry liqueur comes from the Croatian town of Zadar.

Ingredients

Quantity Ingredient
1kg sour cherries, washed and pitted
150 grams caster sugar
300ml red wine
1 cinnamon stick
4 cloves
300ml pouring cream
sea salt

Method

  1. Reserving 20 whole cherries for the garnish, place the remaining cherries, sugar, 500 ml water, the red wine, cinnamon stick and cloves in a large saucepan. Bring to the boil and cook for 5–10 minutes over medium heat.
  2. Add the cream and cook for another 5 minutes over medium heat. Season with salt. Discard the cinnamon stick and cloves.
  3. Purée the soup with a hand-held blender until smooth. Stir in the whole pitted cherries.
  4. Chill the soup in the refrigerator for a couple of hours, then serve with toasted bread.
