The island of Hvar is one of the most beautiful in Croatia. Almost every time I go to Croatia, Hvar is one of the places I visit. You can buy these indigenous cookies on the island as a souvenir to take home as a sweet memory from this wonderful place.

Ingredients

Quantity Ingredient
500g plain flour
1 egg
200g lard, plus extra for greasing
250g honey
70g caster sugar
120g walnuts, finely chopped, plus extra walnut halves for decoration
20g baking powder
1 teaspoon ground cinnamon
2 pinches ground cloves
zest of 1/2 orange
pinch salt
pinch finely ground pepper
2 eggs, whisked

Method

  1. Sift the flour into a mixing bowl. Add the egg, lard, honey, sugar, walnuts, baking powder, cinnamon, cloves, orange zest, salt and pepper. Work the mixture into a dough.
  2. Preheat the oven to 220°C. Grease a baking tray.
  3. Transfer the dough to a lightly floured work surface and roll it out to a thickness of 5 mm.
  4. Using different cookie cutters, cut the dough into a variety of shapes. Prick the biscuits with a fork and decorate them with a walnut half. Put the biscuits on the baking tray, brush with the egg wash and bake for 10–15 minutes until golden brown. Turn them out onto a wire rack to cool. The biscuits will keep stored in an airtight container for up to 2 months.
