Chicken and paprika stew

Dried paprika is used in many Croatian dishes. It is an essential ingredient in many smallgoods as well. This is a classic and very popular recipe. Chicken, paprika and tomato go beautifully together and if you make some polenta and potato dumplings to accompany your paprikaš, you are in for a real treat.

Ingredients

150 grams pancetta, diced
50ml extra virgin olive oil
3 brown onion, chopped
1 green capsicum, diced
1 tablespoon paprika
1kg chicken drumsticks
250ml Dalmatian tomato sauce
250ml chicken or vegetable stock
sea salt
freshly ground black pepper

Potato dumplings

Quantity Ingredient
250 grams polenta
500 grams waxy potatoes, such as desiree, sebago or nicola
2 tablespoons olive oil
or lard

Method

  1. In a saucepan over high heat, sauté the pancetta in the olive oil until translucent. Add the onion, capsicum and paprika, season well with salt and pepper and sauté for 5–10 minutes, until the onion starts to brown and the capsicum is soft. Then add the chicken drumsticks, turning them to coat. Cover with a lid and cook over low heat, turning the chicken occasionally, until all the liquid has evaporated and the chicken is a nice brown colour, about 30 minutes. Add the tomato sauce and chicken stock, and season with salt and pepper. Braise over low heat for another 20–30 minutes.
  2. For the dumplings, bring 1.25 litres of salted water to the boil, then whisk in the polenta. Boil over high heat for about 10 minutes, then reduce the heat to a simmer, stirring occasionally, and cook for about 50 minutes. (If you are using instant polenta, the cooking time is significantly shorter. Follow the packet instructions.)
  3. In a separate saucepan, boil the potatoes in salted water until cooked. Mash them and add to the cooked polenta, mixing well to combine. Add the olive oil or lard and, while the polenta and potato mixture is still hot, use two spoons to shape it into quenelles. Serve with the paprikaš.
