My grandparents have a house on the shores of the Adriatic. They used to have a small boat that my late grandfather went out in every day to catch fish. Usually, the catch were small mixed fish that my grandmother used to fry as soon as they were brought to the kitchen. Once, my grandfather lost his fish trap. He found it two weeks later, so full of fish that he needed help to pull it out of the sea. There were two huge lobsters in the trap along with the fish. My grandmother still has one of those huge lobsters preserved on her kitchen wall to remember that lucky day. Serve these fish with a green salad or Dalmatian silverbeet.

Ingredients

1kg mixed small fish, such as red mullet, sand whiting, smelt or bream
1 tablespoon sea salt, plus extra for seasoning
500ml milk
200 grams plain flour
300ml vegetable oil
1 lemon, halved or cut into wedges
freshly ground black pepper

Method

  1. Clean the fish (scale and gut them), then wash them. Combine the milk and 1 tablespoon salt, then soak the fish in the milk mixture for 1 hour.
  2. Drain the fish, then toss it in the flour, shaking off the excess.
  3. Heat the oil in a frying pan to 190°C, or until a cube of bread turns golden in 10 seconds, and fry the fish for a couple of minutes (not putting too many fish in the pan at once) until golden.
  4. Drain the fish on paper towel to absorb any excess oil, season well with salt and serve with the lemon wedges for squeezing.
