Crabs are an extremely tasty treat. It might take time to clean the crabmeat from the shells, but it’s worth it. This crab dish is usually served with a crisp green salad at the beginning of a meal.

Ingredients

Quantity Ingredient
4 crabs
1 brown onion, finely diced
3 garlic cloves
50ml extra virgin olive oil
1 slice white bread
200 grams white fish, pre-grilled, snapper or any white-fleshed fish fillet
1/1 bunch fresh flat-leaf parsley, chopped
juice of 1 lemon
2 tablespoons dry breadcrumbs
50 grams paški cheese, grated
or parmesan or cheddar
sea salt
freshly ground black pepper

Salad

200 grams lettuce
6 red radishes
50ml extra virgin olive oil
20ml white wine vinegar

Method

  1. Wash and scrub the crabs under running water. Cook the crabs upside down in boiling salted water for about 10 minutes.
  2. Allow the crabs to cool then remove all the meat from the legs. Carefully scrape all the meat from the head, removing the gills and intestines. Reserve the head shells, and put all the cleaned crabmeat in a bowl.
  3. In a frying pan over medium heat, sauté the onion and garlic in the olive oil until golden brown. Add the onion and garlic to the bowl with the crabmeat.
  4. Soak the bread in water, then squeeze out any excess and add the bread to the bowl with the crabmeat.
  5. Break the fish fillet into small pieces and add it to the crab mixture. Add the parsley and lemon juice, season well with salt and pepper and mix together until well combined.
  6. Grease the crab head shells with more olive oil and fill them with the crabmeat mixture.
  7. Preheat the oven to 200°C.
  8. Combine the breadcrumbs, cheese and a little olive oil, season with salt and pepper then cover the crabs evenly with this mixture. Put the crab shells on a baking tray and bake until the breadcrumbs and cheese become crispy and golden, about 20–25 minutes.
  9. Combine the lettuce and radish in a bowl, dress with olive oil and vinegar and season. Serve the crabs with the salad on the side.
