Parsnip mash allows you to enjoy the comfort food that is mash, with less carbohydrates than you would find with potatoes and more fibre. Parsnips are also high in potassium and vitamin C. Their earthy, sweet flavour is a welcome change in mash and works well with many dishes.

Ingredients

Quantity Ingredient
10 parsnips, peeled and roughly chopped
1 litre Chicken stock
pinch ground white pepper
1 tablespoon cream

Method

  1. Place the parsnips, stock and pepper in a saucepan and bring to the boil. Reduce the heat to a simmer and cook for 30–45 minutes, until the parsnips are tender and there is only a little stock remaining. Add the cream and use a potato masher to mash the parsnips until smooth, then serve straight away.
