Ingredients

2 cups sushi rice
500ml water
3 tablespoons rice vinegar
2 tablespoons caster suger
1 tablespoon sea salt

Method

  1. Put the rice in a sieve and rinse under running water until the water is almost clear. Transfer to a medium saucepan, add the water and bring to the boil without a lid. Reduce the heat to low and cook until all the water is absorbed and the rice is tender (about 8–10 minutes).
  2. Meanwhile, combine the vinegar, sugar and salt in a small bowl and stir to partly dissolve the sugar.
  3. Spread the cooked rice out in a flat dish and sprinkle over the vinegar mixture. Stir gently with a wooden spoon until the rice is evenly coated, then cover with a tea towel and leave to steam for 7–8 minutes. Remove the towel and fan the rice for about 5 minutes, until cool.
  4. Cover the rice with a damp tea towel to stop it drying out while you make your sushi.
