Scattering gremolata onto a dish really lifts out the flavours, giving everything a fresh zing.

Ingredients

Quantity Ingredient
1 garlic clove
1/2 cup flat-leaf parsley leaves, finely chopped
2 teaspoons grated lemon zest
2 teaspoons grated orange zest
1 teaspoon grated lime zest

Method

  1. Bring a small saucepan of water to the boil. Add the garlic clove and boil for 2 minutes, then remove it to a bowl of chilled water to cool.
  2. Finely chop the garlic. Put it into a bowl with the parsley and zest and mix well.
