Sour–sweet lamb yahni with black-eyed peas and almonds

In Turkish cookery, ‘yahni’ dishes correspond most closely to good old-fashioned stews. They are winter warmers, and the meat tends to be browned in butter first for extra lusciousness. Accompany this dish with a plain pilav.

Ingredients

100g black-eyed peas
1/3 cup dried sour cherries
800g lamb, (from the leg or shoulder)
50g unsalted butter
1 tablespoon extra-virgin olive oil
8 pearl onions, cut in half
3 garlic clove, finely chopped
60ml apple vinegar
1 tablespoon honey
2 large vine-ripened tomatoes, skinned, seeded and diced
1 red bullet chilli, finely chopped
400ml * chicken stock [rid:9962]
few sprigs thyme
1 teaspoon ground coriander
1/4 teaspoon ground allspice
50ml vegetable oil
60g flaked almonds
1/4 cup flat-leaf parsley leaves, shredded

Method

  1. Soak the black-eyed peas overnight in cold water.
  2. Soak the sour cherries in a little cold water for an hour. Meanwhile, drain and rinse the black-eyed peas. Trim the lamb of any fat and sinew and cut into 3 cm cubes.
  3. Heat the butter and olive oil over a medium heat in a large, heavy-based casserole dish. Brown the lamb all over, then add the onions and garlic and sauté for a few minutes. Increase the heat and add the vinegar and honey. Let the pan bubble vigorously for a few minutes, then lower the heat and add the black-eyed peas, tomatoes, chilli, stock, thyme and spices. Stir well, then cover the pan, lower the heat and leave to simmer very gently for 1–1/2 hours or until the lamb is really tender and the sauce thick. About 10 minutes before the end of the cooking time, add the drained sour cherries.
  4. Heat the vegetable oil in a heavy-based frying pan. Fry the almonds over a low heat until golden brown, then drain on kitchen paper.
  5. When ready to serve, garnish the yahni with the fried almonds and parsley.
