Armenian air-dried beef salad with shanklish

This is a simple salad to throw together. If you want to make it fancier, or serve it as a heartier salad for lunch, poach some eggs and arrange them on top – perhaps sprinkled with a little za’atar or dukkah. Shanklish is a strongly flavoured, crumbly Lebanese cheese available from most Middle Eastern grocers. You’ll find the bastourma (Armenian air-dried beef) in Middle Eastern or Turkish butchers.

Ingredients

Quantity Ingredient
1/2 small ball of shanklish
1 tomato, seeded and diced
1 lebanese cucumber, peeled, seeded and diced
1 small purple onion, diced
1/2 cup flat-leaf parsley leaves, coarsely shredded
1/2 cup watercress leaves
salt and pepper
1 lemon, juiced
100ml extra-virgin olive oil
12 thin slices bastourma

Method

  1. Crumble the shanklish into a mixing bowl and toss gently with the tomato, cucumber, onion, parsley and watercress. Season lightly with salt and pepper, then squeeze on the lemon juice and pour on the olive oil. Toss together gently to combine.
  2. To serve, tip onto a shallow serving dish and drape the slices of bastourma over the top.
