In Lebanon we ate a version of manoushi using a local cheese – ackawi – a soft, white cow’s milk cheese which has a strong flavour, almost like blue cheese. Use any mild blue cheese to achieve a similar effect.

Ingredients

Quantity Ingredient
Manoushi bread dough
extra-virgin olive oil
80g blue castello, crumbled
80g mozzarella, grated

Method

  1. Prepare the dough. Preheat oven to highest temperature.
  2. Roll bread out into rounds and brush with olive oil. Combine the two cheeses and scatter over the dough. Bake for 3 minutes.
