Barbecued free-range young chicken scented with cardamom and thyme

Ingredients

Quantity Ingredient
18 cardamom pods
3 garlic cloves , roughly chopped
1/2 tablespoon salt
2 tablespoons fresh thyme, chopped, or 2 teaspoons dried thyme
1/2 teaspoon ground sumac
80ml olive oil
1 x 1.2kg jointed free-range chicken, or 4 marylands
freshly ground black pepper
4 teaspoons Toum
2 pieces arabic bread
1 cup flat-leaf parsley leaves, coarsely chopped
4 tomatoes, roughly chopped
1 small purple onion, finely diced
1 lebanese cucumber, roughly chopped

Method

  1. Using a mortar and pestle, pound the cardamom pods to loosen the husks. Remove the husks and continue pounding to bruise the seeds and release their flavour. Add the garlic, salt, thyme and sumac. Pound for a few minutes, mixing all the ingredients together well. Add 3 tablespoons of the olive oil and stir in well. Continue to crush until you have a thick, smooth paste.
  2. Rub three-quarters of the paste over the chicken, making sure you get into all the little creases and corners. Mix the remaining paste with the remaining oil and pour over the chicken pieces. Cover and leave to marinade for 4–8 hours, turning occasionally.
  3. When ready to cook, heat your barbecue or grill to its highest temperature. Season the chicken with plenty of black pepper and cook on a high heat for a few minutes until golden all over. Lower the heat and cook slowly for a further 10–15 minutes, until the chicken is cooked through. Turn the chicken pieces constantly to prevent them from burning. Towards the end of the cooking, brush the chicken pieces all over with the remaining marinade and a little Toum. Cook for a few more minutes.
  4. Split each piece of Arabic bread in half. Arrange half a piece of bread on each plate and scatter on some parsley, tomato, onion and cucumber. Top with chicken and serve with extra Toum if you’re game!
