Ingredients

Quantity Ingredient
200g liquorice
300ml water
Vanilla ice cream base

Method

  1. Cut the liquorice into small pieces and put into a saucepan with the water. Heat slowly, stirring from time to time, until the liquorice dissolves to a smooth paste.
  2. Stir about a third of the vanilla ice cream base into the melted liquorice, a bit at a time, so that it is incorporated gradually and remains smooth. Tip back into the remaining base mixture, stir and chill in the refrigerator. Pour the chilled mixture into an ice-cream machine and churn according to the manufacturer’s instructions. Transfer to the freezer until ready to serve.
