A variation of ras al hanout that is particularly good with seafood — especially shellfish. Add to dusting flour or crumbing mixes before frying.

Method

  1. Sieve together 1 tablespoon ground coriander, 1 tablespoon ground cumin, 1/2 tablespoon ground turmeric, 1/2 tablespoon ground ginger and 1/4 tablespoon chilli powder and store in an airtight jar for up to 3 months.
