Preserved lemon guacamole

This has been popping up on Greg’s menus ever since he created it 20-odd years ago. It’s from our first book (Arabesque) but we had to include it again here, as it’s such an effective way of jazzing up boring old guacamole.

Ingredients

Quantity Ingredient
1 large ripe-but-firm avocado, cut into ½ cm dice
1 medium vine-ripened tomato, deseeded and cut into ½ cm dice
1/4 small red onion, very finely chopped
1 long green chilli, deseeded, scraped and finely chopped
1/3 cup coriander leaves, chopped
1/2 preserved lemon, skin only, finely chopped
1 garlic clove, crushed with ½ teaspoon salt
1 lime, juiced
salt
freshly ground black pepper
extra-virgin olive oil and sumac, to serve

Method

  1. In a large mixing bowl combine the avocado, tomato, onion, chilli, coriander and preserved lemon. Whisk the garlic paste into the lime juice and add to the bowl. Mix everything together very gently then taste and adjust the seasoning to your liking. Drizzle with extra-virgin olive oil and sprinkle with sumac before serving with pita.
