Ingredients

Quantity Ingredient
Griddled flatbreads
1 tablespoon fennel seeds
11/2 teapoons turkish red chilli flakes
1/2 teaspoon sea salt

Method

  1. Follow the recipe for making the dough.
  2. Set a small frying pan over high heat. Add the fennel and fry in the dry pan for a good minute, or until they start to pop and release their fragrance. Tip into a mortar and crush to a medium-coarse powder. Transfer to a small bowl and mix with the chilli and salt.
  3. On a floured work surface, roll out each ball of dough to a thickish version of the desired shape. Scatter the spice mix over the surface evenly and then continue rolling it out thinly. Fry the flatbreads, as instructed in the base method. Brush with clarified butter and serve warm.
