Buttery, crisp and golden, these wafers use the classic combination of honey and sesame. Eat them with all sorts of ice-creams and creamy desserts – or just on their own with a cup of strong coffee.

Ingredients

Quantity Ingredient
125g butter
200g caster sugar
4 teaspoons honey
100g plain flour
1/2 teaspoon ginger powder
2 egg whites
100g sesame seeds

Method

  1. In your electric mixer, cream the butter and sugar at high speed. Add the honey, flour and ginger powder. When they are fully blended, add the egg whites and mix until they are well combined.
  2. Line a baking tray with greaseproof paper and smear the mixture into circles about 1 mm thick – a wet finger is ideal for this! Sprinkle the circles liberally with sesame seeds, pouring off any excess.
  3. Preheat the oven to 160°C, and bake on the middle shelf for 7–10 minutes, or until they are golden-brown.
  4. Cool them down on a wire rack and store in them in an airtight container.
