Ingredients

Quantity Ingredient
1 cos lettuce
or 4 handfuls baby cos leaves
1 pink grapefruit, peeled and segmented
3 fresh figs, thinly sliced lengthwise
1/2 avocado

Walnut dressing

Quantity Ingredient
100ml extra virgin olive oil
1/3 cup walnut oil
3 tablespoons red wine vinegar
1 tablespoon dijon mustard
1 garlic clove, crushed
pinch salt
pinch sugar

Method

  1. Whisk the dressing ingredients together in a jug.
  2. If using a whole lettuce, discard the outer leaves, then roughly chop the remaining leaves. If using baby cos leaves, leave them whole.
  3. Arrange the lettuce, grapefruit segments, figs and avocado in a serving bowl. Gently toss with the desired amount of dressing and serve.
