Ingredients

3 cups plain flour
1 cup semolina
250g margarine
1 teaspoon baking powder
1 teaspoon sea salt
1 egg
sesame seeds, for sprinkling

Filling

5 eggs
500g feta
1 teaspoon baking powder

Method

  1. Preheat the oven to 160°C.
  2. Mix the flour, semolina, margarine, baking powder and salt using an electric mixer fitted with a dough hook. Slowly add about 1 cup water until mixture has a dough-like consistency.
  3. To make the filling, beat the eggs in a bowl and add crumbled feta. Add the baking powder and mix until well combined.
  4. Roll the dough on a floured surface until about 5 mm thick. Cut circles out of the dough using a glass.
  5. Place a circle of pastry in your palm. Fill half the circle with some of the filling, fold the edges of the pastry over to enclose, then pinch the edges together to seal. Repeat.
  6. Beat the egg with 1 tablespoon water, then brush over each pastry. Sprinkle the pastries with sesame seeds and place on a baking tray.
  7. Bake for 30 minutes, or until golden.
