Rice with fried noodles, almonds and raisins

Ingredients

Quantity Ingredient
1 cup basmati rice
2 tablespoons olive oil
100 g packet fried noodles
1/3 cup blanched almonds
1/3 cup raisins

Method

  1. Rinse and drain the rice, then place in a large saucepan with 2 cups water. Bring to the boil, then reduce the heat to low. Cover and leave for 15 minutes, or until the water has been absorbed and the rice is cooked. Fluff the rice with a fork and set aside.
  2. Heat the oil in a frying pan over medium heat and fry the noodles until golden and crisp. Drain the noodles on paper towel and set aside.
  3. Fry the almonds in the remaining oil until golden, then stir in the raisins. Fold the mixture through the rice and top with the fried noodles.
