The quantities may seem odd, but these patties are delicious!

Ingredients

Quantity Ingredient
5 eggs
200g minced chicken
1 onion, finely chopped
1 bunch spring onions, finely chopped
1 bunch parsley, finely chopped
1 potato, grated and squeezed to remove the liquid
1 teaspoon chicken stock powder
3 tablespoons plain flour
vegetable oil, for pan-frying

Method

  1. Beat the eggs in a large bowl. Add all the remaining ingredients except the oil. Season to taste with sea salt and freshly ground black pepper and mix together until thoroughly combined.
  2. Heat about a tablespoon of oil in a frying pan. Spoon the mixture into the pan to form discs. Cook for a few minutes on both sides until golden brown and cooked through. Remove from the pan and keep warm while cooking the remaining patties, adding a little more oil to the pan each time.
  3. Serve warm.
