Ingredients

Quantity Ingredient
200g dark chocolate, chopped
4 eggs, separated
300ml thickened cream
strawberries, to garnish
chocolate shavings, to garnish

Method

  1. Gently melt the chocolate in a double boiler. Allow the chocolate to cool, then add the egg yolks and stir to combine.
  2. Beat the cream until it is thick, then add it to the chocolate mixture.
  3. Beat the egg whites until stiff , then gently fold them into the chocolate mixture, being careful not to lose too much air.
  4. Pour the mousse into a 20 cm bowl, or four individual ramekins, and refrigerate for at least 3 hours before serving. Garnish with chocolate shavings and strawberries and serve.
