Honey wafers with chocolate and macadamia nuts

Ingredients

Quantity Ingredient
100g unsalted butter, softened
3/4 cup caster sugar
1/4 cup honey
1/2 cup plain flour
2 egg whites
3/4 cup unsalted macadamia nuts, chopped
100g dark chocolate, chopped

Method

  1. Preheat the oven to 180°C. Line a 30 x 20 cm flat-sided baking tray (one with no edges) with baking paper.
  2. Process the butter, sugar, honey, flour and egg whites in a food processor until smooth.
  3. Spread the mixture thinly over the baking paper on the baking tray, then sprinkle with the nuts and chocolate.
  4. Bake for 18–20 minutes, or until golden. Remove from the oven and allow to cool on the tray before breaking into pieces.
