Ingredients

Quantity Ingredient
1/2 cup caster sugar
2 eggs
8g vanilla sugar
1/2 cup plain flour
1/2 cup self-raising flour
2/3 cup almonds

Method

  1. Preheat the oven to 160°C.
  2. Beat the caster sugar and eggs using an electric mixer until pale. Combine the remaining ingredients in a separate bowl, then stir in the egg mixture. Fold the almonds through.
  3. Pour the mixture into a 25 cm loaf tin and bake for 30 minutes, or until a toothpick inserted in the loaf comes out almost dry.
  4. Remove from the oven and leave to cool. Store the bread in a plastic bag overnight.
  5. To serve, thinly slice the bread and bake the slices on a baking tray in a preheated 160°C oven for 8 minutes.
