Ingredients

Quantity Ingredient
2 x 250 g packets frozen spinach
20g butter
1 tablespoon olive oil
2 tablespoons plain flour
2 garlic cloves, crushed
2 eggs, beaten
1/2 cup milk or cream, (optional)

Method

  1. Thaw the spinach, then squeeze out the excess water.
  2. Heat the butter and oil in a saucepan over medium heat, then stir in the flour until smooth.
  3. Stir in the garlic and season to taste with sea salt and freshly ground black pepper.
  4. Add the spinach and stir until it has combined with the roux, then stir in the eggs, and the milk or cream if desired. Cook until heated through.
  5. Serve hot as an accompaniment to paprika chicken.
