Ingredients

Quantity Ingredient
1/3 cup crunchy peanut butter
2 tablespoons raw sugar
2 tablespoons sweet soy sauce
1 teaspoon sea salt
1/2 lemon, juiced
1 tablespoon sweet chilli sauce
24 green beans, lightly steamed
1/2 cauliflower, cut into florets and lightly steamed
1 cup bean sprouts
4 tomatoes, cut into thin wedges
1 lebanese cucumber, thickly sliced

Method

  1. Combine all ingredients but the vegetables in a saucepan with 1–2 cups water. Simmer for 20 minutes, stirring regularly, until the mixture is well combined and the consistency of a thick sauce. Stir in a little more water if it is getting too thick. Remove from the heat and allow to cool.
  2. Arrange the vegetables on a serving platter and drizzle the peanut sauce over the top.
