Ingredients

Quantity Ingredient
1 teaspoon bicarbonate of soda
1 cup dates, pitted
250g butter
1 cup sugar
3 eggs
1 cup walnuts, chopped, plus extra walnut halves to decorate
2 cups self-raising flour

Icing

Quantity Ingredient
1 cup icing sugar
1 teaspoon instant coffee
1 dessertspoon cocoa powder
a few drops vanilla essence
splash milk

Method

  1. Mix the bicarbonate of soda with 1 cup hot water. Add the dates and leave to soak overnight.
  2. The next day, preheat the oven to 180°C. Grease a ring cake tin.
  3. Cream the butter and sugar using an electric mixer, then beat in the eggs. Stir in the dates with their soaking water, as well as the walnuts. Fold in the flour and pour the batter into the ring tin.
  4. Bake for 45 minutes, remove from the oven and allow to cool.
  5. To make the icing, combine the dry ingredients with the vanilla essence, adding just enough milk to make a smooth icing. Ice the cooled cake and decorate with walnut halves.
