Ingredients

Quantity Ingredient
2 tablespoons vegetable oil
2 brown onions, finely chopped
1 tablespoon berbere spice mix
1/4 teaspoon freshly ground black pepper
1 teaspoon sea salt
1/2 teaspoon mixed spice
1/4 teaspoon curry powder
1/2 teaspoon garlic, crushed
2 tablespoons tomato paste
1 chicken, cut into 8 pieces
1 teaspoon cardamom seeds, roasted in a pan

Method

  1. Heat the oil in a large saucepan over medium heat and sauté the onions until golden. Stir in the spices and garlic and cook, stirring, for 5 minutes.
  2. Stir in the tomato paste and 1 cup water and bring to the boil. Add the chicken pieces and stir to ensure the chicken is coated with the spices.
  3. Cover and cook for 1 hour, stirring every 15 minutes.
  4. Sprinkle with the cardamom seeds and serve with injera.
