Carrot and potato sauce

Ingredients

Quantity Ingredient
1 tablespoon vegetable oil
1 brown onion, diced
2 garlic cloves, crushed
1 teaspoon sea salt
1 1/2 teaspoons curry powder
1 teaspoon tomato paste
3 potatoes, peeled and cut into cubes
2 carrots, peeled and cut into 2 cm cubes
3/4 cup frozen spinach, thawed and chopped

Method

  1. Heat the oil in a saucepan over medium heat and sauté the onion and garlic for 2 minutes, without browning. Stir in the salt, curry powder, tomato paste and ¼ cup water, then add the potato and carrot and stir to combine.
  2. Add 1 cup water, then cover and cook for 30 minutes, or until the vegetables have softened.
  3. Stir in the spinach and simmer for a few minutes until well combined. Serve with injera.
